Pecorino cheese matured for 18 months, it is a table cheese, from sheep’s milk curdled with calf rennet.
An interesting pecorino, with a straw yellow rind. Its paste is pale white with an elastic consistency. The palate meets a sweet and harmonic taste, pleasantly persistent. It is a perfect pecorino for tasting, paired with Carasau bread or with the savoury Guttiau bread. Perfect even if used to enrich, enhance and flavour structured first courses with strong and rich taste, like risottos or timbales.
