The Saba is a very sweet syrup obtained from fresh must. With notorious therapeutic proprieties, it has the ability to alleviate stomach aches and it is also a perfect coadjuvant for treating flu-like symptoms.
Traditionally used as a sweetener as a substitute for sugar, the saba is obtained from the cooking of the first pressed must, flavoured with the natural aromas of orange and clove: this makes a natural grape syrup, concentrated and rich in perfumes and flavours typical of Sardinia. Since ancient times, it is produced by Sardinian women and it is mostly used for making sweets and dishes. Thanks to its high sugar concentration, it keeps for a long time.
