This pasta format has characteristic “gallies” with wide spacing that, thanks to its porosity, it holds the sauce in a perfect way. Because of its unique porosity it has to be cooked al dente and swiftly drained.

Araj, a Sardinian name for a pasta factory that is indissoluble tied to Sardinia. Fresh wind: this is the meaning of the company’s name, and this is what they wanted to convey with their products. The semolina is obtained from a cold milled process in order to maintain the product's organoleptic qualities and above of all the wheat germ intact. The process of making this pasta is artisanal, bronze-drawn and a slow drying with low temperatures. By using this technique, the company avoids the three times cooking process of the pasta, and one may notice it by the characteristic pale-yellow colour and by looking at its silhouette it is possible to see the durum wheat semolina grains.
