The Culurgionis are characteristic fresh pasta dumplings with potatoes, pecorino cheese and wild mint filling, enclosed by hand with a seal shaped like a spike of wheat, originating from the Ogliastra territory. This raviolo has to be simply boiled in salted water and served with a tomato and basil sauce or with butter and sage. Ideal when paired with a glass Sardinian Vermentino wine.
