Small pitted olives, harvested at the perfect stage of ripeness, are seasoned and preserved in oil. They are excellent for enjoying as an aperitif or as an appetizer. They are also perfect for dressing cold pasta or rice salads and as ingredients in flavorful sauces and main dishes.
