The most ancient pecorino cheese of Sardinia, from the raw milk of sheep rigorously and exclusively of Sardinian breed only produced on the island territory. A cheese with grainy paste with little regular holes, slightly straw-yellow coloured. It has a smooth and brown rind, not audible. It is pleasantly spicy to the palate with a distinctly aromatic scent. To be enjoyed at the end of the meal paired with sweet tastes and a glass of Cannonau.
