From a 100% Sardinian tomatoes, it is a stock with a sugary, vivid and creamy taste. In order to obtain it, the tomato is cleaned, deprived from the excess of water and then grinded and pre-cooked at high temperatures, between 85°C and 100°C. The paste is ideal for preparing fast first courses in order to enhance the taste, during the preparation and in dishes with long cooking time to add colour and flavour.
